New Year's Black-eyed Peas with Ham

Introduction

This is a great side dish to bring in the New Year. Serve with collard greens and cornbread.
Serving size is 1/4 cup.

Ingredients

    2 cups dry Black-eyed Peas
    1-2 Tbsp Olive oil
    1 medium Onion-chopped
    1 Smoked Ham Hock
    2 cups Chicken Broth
    2 cups water

Directions

Soak black-eyed peas overnight. Drain water. Heat oil in large pot and saute onions. When onions are clear add black-eyed peas, water, chicken broth and ham hock. Simmer for 2 hours. Remove ham hock and cut meat off the bone. Add back to beans and stir. Serve with collard greens or spinach and cornbread.

  • This is the closest I've found to my grandmother's basic recipe. We have it every New Year, traditional food for good luck! Nowadays I use either canned black eye peas or if available, fresh ones in the produce section. Variations: diced tomatoes, rice, red pepper flakes, sub in smoked Kielbasa - 12/26/13
