Crockpot Black Beans and Chicken

Introduction

I modified this from another recipe I found online. This is on the high side of sodium, but packed with protein and great tasting.... Just drink lots of water! I recommend you eat a salad before this meal because you'll be tempted for seconds! I modified this from another recipe I found online. Number of Servings: 6

Ingredients

    2 lbs boneless, skinless chicken breasts cut in smaller pieces (6-8)
    1 Tbl Cumin Powder
    1 Tbl Chili Powder
    1 16 oz jar Picante Sauce
    Juice from 1 lime
    3 cloves Garlic
    2 15 oz cans Black Beans, drained and rinsed
    1 Tbl reduced fat shredded cheddar cheese per serving
    1 Tbl reduced fat sour cream per serving

Directions

In a crockpot, stir together black beans, picante sauce, cumin, chili powder, garlic, and juice from the lime.

Place cut up chicken pieces in mixture and mix to coat really well.

Cook in crockpot on high approximately 4 hours or on low all day while at work.

When ready to serve, use serving spoon and cut up chicken in pot (it will shred very easily). Place 1/6 portion on serving plate and top with a TBL of reduced fat shredded cheese and reduced fat sour cream.
