Pasta Primavera

Introduction

A quick, easy and delicious pasta dish. Perfect for busy nights! A quick, easy and delicious pasta dish. Perfect for busy nights!
Number of Servings: 8

Ingredients

    2 T flour
    2 T olive oil
    1 clove garlic
    1 block fat free cream cheese
    2-3 cups vegetable broth*
    1 lb. pasta
    1 bag frozen mixed vegetables of your choice (California mix is good)

Directions

Start a pot of water for pasta. Microwave veggies.


Put olive oil and garlic in a saucepan. Cook 1 minute and add flour. Cook 2 minutes, stirring constantly. Add cream cheese and let it melt. Whisk in 2c. vegetable stock. If sauce is too thick, add up to 1 additional cup of stock. Add a dash of nutmeg and pepper. Sauce is done.

Cook your pasta and drain, and in a big bowl combine pasta, cooked and drained veggies and sauce. Serve with Parmesan cheese.


You can use chicken stock, but this would obviously make this no longer vegetarian.
