Bobotie

Number of Servings: 4

Ingredients

    120 g Brown bread, crusts removed
    125 ml Milk
    1 tablespoon Curry powder
    16 g Apricot jam, smooth
    500 g Mince
    25 ml Oil
    Salt and Pepper, to taste
    1 large Onion, chopped
    3 cloves Garlic, crushed
    1 large Ginger root, finely chopped
    1 large Egg, beaten
    3 Bay leaves
    TOPPING
    125 ml Milk
    ½ teaspoon Turmeric powder
    1 large Egg, beaten
    Salt and Pepper, to taste

Directions

Place bread in a container, add milk and leave to soak for 10 mins.
Mash with a fork.
Sauté onions in oil until translucent, add garlic, ginger and fry for a minute.
Add curry powder and cook for 2 minutes, add jam and stir to combine.
Remove from heat and leave to cool.
Beat egg, add salt and pepper.
Place mince in a bowl, add bread, bay leaves, onion mixture and egg.
Using metal spoon, gently combine mixture.
Spoon mince mixture into greased pie dish.
Bake in pre-heated oven at 180ᴼ for 15 - 20 mins.

TO PREPARE TOPPING:
Beat eggs and milk together.
Add turmeric powder, salt and pepper.
Remove bobotie from oven and pur egg mixture over mince.
Return bobotie to oven and bake for a further 20 -25 mins.
