Introduction

I was searching for a not-so-sweet and not-so-fat alternative to traditional pumpkin pie and came up with this. It's really good with a spoon of fat free Cool Whip (not included in nutrition info). Number of Servings: 16

Ingredients

    1/2 Cup - Granulated Sugar

    1 tsp - Salt

    2 tsp - Ground Cinnamon

    1 tsp - Ground Ginger

    1/2 tsp - Ground Cloves

    1- Whole Large Egg

    4 - Large Egg Whites

    29 oz Can - Libby's 100% Pure Pumpkin

    12 oz Can - Carnation Evaporated Skim Milk

    1 Tbsp - Vanilla Extract

Directions

Preheat oven to 425.

Mix sugar, salt, cinnamon, ginger, and cloves in a small bowl.

Beat eggs and egg whites in a large bowl.

Stir in pumpkin and sugar-spice mixture.

Gradually stir in evaporated milk.

Pour into baking dish (I used a 3 qt cassarole dish) and bake in 425 oven for 15 minutes.

Reduce temperature to 350, and bake for 75 more minutes or until knife inserted in center comes out clean (will depend on what size dish you use).

Cool and serve.

Makes 16 - 1/2 cup servings.
