Sesame Noodles with Vegetables (vegan)

Introduction

The toasted sesame oil used here is for flavour, not for cooking. Cooking the veggies in a few drops of water, and then adding the oil to the finished dish, allows you to get the most of the oil's flavour. Officially my favourite aromatic oil... it's delectable! Ingredients

    100g Rice Noodles
    1 tbsp soy sauce
    1 tbsp honey
    3 cloves garlic, finely chopped
    1 tbsp sesame seeds
    50g sliced sweet peppers (any colour)
    1 small onion, sliced
    50g spinach (frozen or fresh)
    1 cup shredded cabbage
    1/2 tsp chilli flakes
    1 tbsp toasted sesame oil
    water

Directions

Chop all veggies into fine strips. Set aside.

Boil noodles according to packet instructions. While boiling, heat a few tablespoons of water in a pan and garlic , chilli flakes and all veggies. Stirfry until all veggies are soft and water is practically evaporated. Add soy sauce and continue to stirfry for another minute. Take off heat and set aside.

Once noodles are cooked, drain and set aside. Place honey, one tablespoon water, and sesame seeds to the serving bowl. Zap the bowl in microwave for as long as it takes for honey to melt into water (30 seconds approx). Then add the noodles to the honey mixture and toss until coated with honey and seeds.

Top with cooked veggies. Sprinkle oil on top and serve.
