I use greek yogurt because it is high in protein and has a very creamy texture. This is easy to make the night before and voila! instant breakfast.
I use greek yogurt because it is high in protein and has a very creamy texture.
1/3 cup low-fat plain greek yogurt
1/4 cup cranberry juice
4 Tbsp old-fashioned rolled oats (as in not instant)
1 Tbsp dried cranberries (or raisins)
1/2 Tbsp unsalted almonds (sliced or slivered)
1/2 Tbsp wheat germ
1 tsp honey
The mix starts out rather liquid but soaks beautifully overnight. If you wish, top with some fresh fruit before serving.
This makes one serving
(I couldn't quite get the Spark Nutrition right - what with calculating what percentage of a cup a teaspoon is :)
