1 Pound (500 grams) Chicken Breast, Diced
1 Tablespoon EVOO (Olive Oli)
1 Large Carrot, Diced
1 Large Onion, Diced
2 Celery Stalks, Diced
2-4 Cloves Garlic, Minced
1 Tablespoon Paprika (preferably Smoked but regular is ok)
Salt & Pepper
2 Cups Chicken Stock
1/4-1/2 Cup (4-8 tbls) Hot Sauce
1 Cup Tomato Sauce
1 Cup Crushed Tomatoes
80 Grams Blue Cheese
Flat Leaf Parsley for Garnish
Serve over rice or crunched up tortilla chips.
Serve over steamed rice. Sprinkle the Blue Cheese over the top (20 grams per serving). For a crunchy alternative crunch up some tortilla chips and sprinkle over the top.
