Introduction

This heart healthy soup is high on flavor not fat! An excellent way to use up leftover chicken. This heart healthy soup is high on flavor not fat! An excellent way to use up leftover chicken.
Number of Servings: 6

Ingredients

    1/4 cup onion, diced
    2 tsp minced garlic
    1 tsp olive oil
    6 oz cooked chicken breast, cut into small pieces
    2 cups chicken stock or broth
    1/4 cup carrot puree
    1 can black beans, drained and rinsed
    1 can pinto beans, drained and rinsed
    4 tsp worchestershire sauce
    salt and pepper to taste

Directions

Sautee onions and garlic in olive oil until onions are translucent. Add in the beans, 2 cups of stock, carrot puree and worchestershire. Cook just until boiling then stir in chicken. Turn down to simmer and let cook for 20 minutes or until good and hot. Salt and pepper to taste.

Makes 6 servings, 1 cup each
