Chicken and dressing casserole

Introduction

This was always a family favorite growing up. My mom usually used left over turkey from thanksgiving. She'd freeze the turkey and pull out the left overs after we got over being sick and tired of turkey after the holidays. My hubby could eat a whole pan of this if I let him :D This was always a family favorite growing up. My mom usually used left over turkey from thanksgiving. Number of Servings: 6

Ingredients

    1-2.5 lb fryer (or I use 4 or 5 frozen boneless chicken breasts)
    1 pkg stuffing
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1 large can evaporated milk
    1 stick of butter
    1/2 cup chicken broth (I use it from cooking chicken)


    *This recipe has been in my family for more than 20 years (or atleast as long as I can remember) so, its not quite the healthiest. But, the soups can be substituted for the low sodium and fat varieties, and I use the broth that comes from boiling the chicken, instead of the canned variety, so that cuts out alot of the sodium too!

Directions

Boil chicken in salted water. Cut into 1 inch cubes. Melt butter and pour over stuffing. Put half of the stuffing in bottom of a 9x13" pan. Add chicken. Blend together 2 cans of soup, milk and 1/2 cup of broth. Pour over chicken. Spread remaining stuffing on top. Bake at 350 for 30 min or until done.
