Cheese Polenta

Introduction

This is an economical dish that can be used for both breakfast and other meals. It is similar to cornmeal mush or grits and may be chilled and cut into slices to fry in butter. This is an economical dish that can be used for both breakfast and other meals. It is similar to cornmeal mush or grits and may be chilled and cut into slices to fry in butter.
Number of Servings: 4

Ingredients

    3 cups Water
    1 cup 2% milk
    1 dash salt (optional)
    1 tsp garlic powder
    1 Tbsp Smart Balance Butter Spread
    4 0z grated extra sharp cheddar cheese
    4 Tbsp grated parmesan cheese


Directions

Bring water, milk, salt, garlic powder, and buttery spread to a boil over high heat. Add cornmeal , whisking constantly, until thickened. Reduce heat to low and cook 8 to 10 minutes, whisking often, until thickened.

Stir in chesses, mixing well. serve polenta soft as you would grits.

Or: to make rectangles, spoon into a plastic wrap-lined 9x5inch loaf-pan. Cover and chill 8 hours. Remove from panand plastic wrap; cut into 1/2 inch thick slices. Cook in melted butter, over medium-high heat, 5 minutes on each side or until golden.

    I am so sorry to be truthful I did not realize I had omitted the cornmeal. I believe it was I cup but I will have to get back to you on it. This is a dish we skip for a month or two and then make again sometimes. I think you will like it but I truly will have to get back to you on it.
