Zingy Roasted Potatoes

Introduction

The chicken broth makes it possible to use less olive oil and still have nicely roasted potatoes. The mustard gives the potatoes a nice zing, but you can use regular yellow mustard if you don't like the coarse stuff. You will still get the zing without the chunks. Ingredients

    2 pounds potatoes
    4 tbsp olive oil
    1/4 cup chicken broth
    1 tablespoon minced garlic
    1/2 tsp onion powder
    1/2 teaspoon dried basil
    1/2 teaspoon dried thyme
    1/2 teaspoon dried oregano
    1 tsp coarse mustard
    1/4 tsp salt
    pinch of black pepper
    1/2 bell pepper, diced
    1/2 onion, diced
    1/2 cup cut flat leaf parsley

Directions

Peel and cut potatoes into large chunks. Rinse well to remove the starch. Put into large roasting pan.

Grate or finely chop garlic. Add olive oil, chicken broth, thyme, oregano, basil, salt, black pepper, onion powder and coarse (or regular) mustard. Pour on top of potatoes and mix well.

Bake 25 minutes. Remove from oven and stir in bell peppers and onions. Be sure to stir potatoes well. Bake an additional 25 minutes, until fork tender. Sprinkle parsley on top.
