White Chili with Chicken

Introduction

This is a wonderful chili on a cold day. It's excellent if you want to add some Monterey Jack Cheese (not included in the nutritiional information so this would be extra). My kids love it and it's real easy to put together. This is a wonderful chili on a cold day. Ingredients

    1 T Olive Oil
    1 pound boneless, skinless chicken breast (cut in cubes)
    3/4 cup chopped onion
    3 c chicken broth
    2 4 oz can chopped green chilis (drained)
    3 19 oz can white kidney beans, undrained
    Spice Blend:
    3 tsp garlic powder
    3 tsp ground cumin
    1 1/2 tsp Oregano
    1 1/2 tsp Cilantro
    3/4 tsp Ground White pepper

Directions

Heat Olive Oil in 3 qt sauce pan on medium heat and cook chicken 4-5 minutes, stirring often. Remove chicken with slotted spoon. Cover and keep warm. Add chopped Onion to saucepan and cook 2 minutes. Stir in chicken broth, green chili's, and spice blend and simmer for 30 minutes. Stir in cooked chicken and kidney beans - simmer for 10 minutes. Garnish with pepper jack cheese and green onions if desired (this will be an additional item to add to the nutrition counter). Sometimes I will do this in the crock pot as well - simply cook the chicken and onions ahead of time and place them with the rest of the ingredients in the crock pot and let it simmer for the day.

  • Oooh, this is such a throwback to my child hood! At the Cincinnati Zoo in Ohio, they had "White Tiger Chili" at their restaurant, and I haven't had it since I lived in Ohio 15 years ago.
