Chicken Marsala (Weight Watchers)

Ingredients

    1 tsp canola oil
    3/4 lb skinless bonelss chicken breasts cut into strips
    4 shallots
    1 tbs all purpose flour
    1/2 cup chicken broth
    1/4 cup marsala wine
    1/4 cup of sliced mushrooms
    1/4 tsp ground pepper

Directions

In a large nonstick skillet, heat the oil. Add the chicken and cook, turning as needed, until lightly browned, 5-6 minutes. Transfer to a plate.

Spray the same skillet with nonstick cooking spray; add the shallots and cook, stirring as needed until softened about 5 min. Add the flour; cook stirring contantly until the flour coats the shallots about 1 minute. Gradually stir in the broth and wine; cook stirring constantly until the mixture boils and thickens about 2 min.

Stir in the chicken, mushrooms, and pepper; bring to a boil. Reduce the heat and simmer covered until cooked through abotu 5 min. Serve with rice.

  • Just as good as the 4tbs EACH butter/oil recipe I'm used to. Personal preference - I doubled the mushrooms/halved the onions & pounded the chicken flat instead of slicing. Served over rice pilaf. Chicken broth is a great way to add taste w/little calorie impact. Thanks to Siyenemmert! - 1/3/09
