.75 cups whole wheat flour
.25 cups all purpose flour
.50 cup cocoa powder, unsweetened
.75 tsp baking powder
1/4 tsp salt
1.25 cups sugar
.25 cups prune yogurt or .25 cups prune baby food
3 tblsp Canola oil
3 egg whites
1 tsp vanilla extract
1 oz (14 halves) chopped walnuts
Preheat oven to 350 degrees farenheit. Spray a 9"X9" baking pan with nonstick cooking spray.
In a large bowl combine the flours, cocoa, baking powder, salt and sugar. Mix well.
In a medium bowl combine the prune baby food or yogurt, oil, egg, egg whites and vanilla.
Add the wet ingredients to the dry ingredients. Mix just until moistened. Overmixing will result in tough texture.
Pour into prepared pan. Sprinkle walnut pieces on the top of the batter. Bake for 25-30 minutes or until the top springs back when lightly touched. Do not overbake. Allow to cool in the pan before cutting.
