Cheesy Chunky Potato and Ham Soup

Number of Servings: 10

Ingredients

    -2 c. water
    -1/4 tsp salt
    -3 white potatoes (peeled and cut into small cubes)
    -1/2 onion (chopped)
    -3 tbsp butter
    -3 tbsp flour
    -Ground black pepper
    -4 c. milk
    -1 can Campbells Condensed Cheddar Cheese Soup
    -1 c. shredded Fat Free Cheddar Cheese
    -2 packages (14 oz. total) of fully cooked lean ham steak

Directions

-Boil water and salt
-Add the potatoes and cook until tender.
-Drain and reserve 1 c. of cooking liquid (you can add water to make it 1 c. if necessary)
-Melt the butter in a medium saucepan over medium heat.
-Saute the onion in the butter until tender.
-Add the flour to the butter/onion mixture. Stir until smooth.
-Season with a little pepper and continue to cook and stir for 1 minute.
-Gradually add the potatoes, reserved cooking liquid, milk, and cheddar cheese soup.
-Stir well.
-Add cheese and ham. Simmer soup over low heat, stirring frequently, for 10-20 minutes.

-Makes 10 cups (1 serving=1 cup)
-Entire process takes about 50 minutes (prep time is done while the soup is cooking)
