Introduction

Was using up some "no-no" ingredients from Christmas - the original recipe contains no half and half or cheddar cheese. I love it both ways! Was using up some "no-no" ingredients from Christmas - the original recipe contains no half and half or cheddar cheese. I love it both ways!
Number of Servings: 10

Ingredients

    1 cup Chicken stock, home-prepared
    2 cups Swanson Chicken Broth 99% Fat Free
    2 cups Chicken Bouillon
    3 cups chopped broccoli (3 crowns)
    1 whole leek, chopped
    6 oz Cabot Seriously Sharp Cheddar
    3/4 cup Half and Half Cream

Directions

Bring chicken stock, broth, bouillon, broccoli and leeks to boil over medium high heat and cook until tender, about 10-15 minutes. Transfer pot contents to a blender. Using a strainer, pour about half of the broth back to the pot. Puree the remaining broth and solids until smooth. Return the puree back to the pot. Reduce heat to low. Add the cheddar cheese and half and half and cook until hot throughout.

Makes about 10 one cup servings.
