Kale bean soup

Ingredients

    1/2 package Western Family Bean Soup Mix, presoaked overnight
    4 cups low sodium vegetable broth
    1 cup chopped sweet onion
    1 cup diced celery
    4 ounces diced ham
    3.5 cups chopped kale
    1 small can diced tomatoes, no salt added
    1 cup water
    1 tbsp oregano
    1 tbsp basil
    1 tbsp chili powder
    1 tbsp olive oil

Directions

Presoak or quick boil beans. In soup stock pan, heat olive oil. Add onions and celery. Saute till limp. Add in beans, spices, tomatoes, diced ham, broth and water. Simmer on low heat until beans are done. Add in kale and simmer until kale is limp. Makes 9 cups. Serving is 1 cup.
