I saw these on another website and wanted to make a few changes to their recipe. I added jalepenos to half of the batter for a yummy change. We had these with the Slow Cooker Chicken Taco Stew. Ingredients

1 c. cornmeal
1 c. flour
1/4 c. sugar
1/2 t. salt
3 t. baking powder
1 c. skim milk
1 egg
1/4 c. melted butter substitute, melted (I used Smart Balance Omega Buttery Spread)
Directions
In a bowl, combine the ingredients. In another bowl, combine corn, water, eggs and applesauce; mix well. Stir in dry ingredients just until moistened. Fill muffin cups coated with nonstick cooking spray. Add the mix by 1/4 cupfuls. Bake at 350 degrees F for 17-20 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks. Makes 12.
