Introduction

I saw these on another website and wanted to make a few changes to their recipe. I added jalepenos to half of the batter for a yummy change. We had these with the Slow Cooker Chicken Taco Stew. Ingredients

    1 c. cornmeal
    1 c. flour
    1/4 c. sugar
    1/2 t. salt
    3 t. baking powder
    1 c. skim milk
    1 egg
1/4 c. melted butter substitute, melted (I used Smart Balance Omega Buttery Spread)

Directions

In a bowl, combine the ingredients. In another bowl, combine corn, water, eggs and applesauce; mix well. Stir in dry ingredients just until moistened. • You mention water and applesauce in the directions but don't give the amounts. Did you use applesauce instead of the butter? I'd like to make these but need some clarification. Thanks. - 10/28/10
