Chicken and Broccoli Divan

Introduction

A family favorite. Even my picky kids will eat this. A family favorite. Even my picky kids will eat this.
Number of Servings: 6

Ingredients

    Two cans cream of chicken soup mix (or one big can)
    2 Tablespoons of light mayo or salad dressing
    1 cup milk (I use nonfat)
    3 ounces cooked chicken breast
    1 bag frozen broccoli
    3 Tablespoons curry powder (more or less to taste)
    1 cup shredded cheddar cheese (you could omit this to reduce the fat)
    2 1/2 cups rice

Directions

Mix together first five ingredients into casserole dish. Heat casserole dish in a 350 oven for 20 to 30 minutes, until heated through. Cook rice separately. Put cheese on top of casserole and heat another five minutes to melt. Serve over rice. Makes six hefty servings.
