Introduction

Healthy, delicious pancakes! Healthy, delicious pancakes!
Number of Servings: 5

Ingredients

    1 cup sour milk (skim milk + 2-3 tsp vinegar or lemon juice)
    1/2 cup whole wheat flour
    1/4 cup wheat germ
    1/4 cup milled flax seed
    1 tsp salt
    2 tsp sugar
    3/4 tsp baking powder
    1/2 tsp baking soda
    1 egg, slightly beaten

Directions

Make milk sour by adding lemon juice or vinegar, let sit for 5 minutes.
Mix dry ingredients.
Add egg and milk all at once, mixing quickly
Spoon pancakes, 2 spoonfuls of batter at a time, onto a hot, lightly greased griddle, turn when bubbly, remove when second side rises.
Makes 10 palm-sized pancakes
