Cheesy Chicken & Rice

Introduction

A family favorite, I adjusted it to use lower fat/sodium soup and added frozen veggies. You could also use reduced fat cheese. A family favorite, I adjusted it to use lower fat/sodium soup and added frozen veggies. You could also use reduced fat cheese.
Number of Servings: 4

Ingredients

    1 can Campbell's Healthy Request Cream of Chicken Soup (undiluted)
    1 1/3 Cups water
    3/4 Cup uncooked Minute Rice
    1/2 t onion powder
    1/4 t black pepper
    1 10 ounce bag frozen mixed vegetables
    2 large boneless skinless chicken breasts
    2/3 Cup shredded cheddar cheese

Directions

1. Mix soup, water, rice, seasonings and vegetables in shallow 2 quart baking dish.

2. Place chicken breasts on top of rice mixture.

3. Cover and bake at 375 degrees for 45 minutes.

4. Sprinkle with cheese, bake until melted.

Serves 4 (1/2 chicken breast and 1/4 of the rice = one serving)
