Blueberry Muffins

Number of Servings: 24

Ingredients

    1/2 cup unsalted Butter, at room temp
    1/2 cup Splenda
    1/4 cup Splenda brown sugar
    1 1/2 Tbsp Vanilla Extract
    2 eggs
    2 tsp Baking Powder
    1/4 tsp Salt
    1 tsp cinnamon
    2 cups flour, white or wheat
    1 cup skim milk
    1 1/2 cups fresh Blueberries

Directions

Preheat oven to 350*.
In a large bowl stir together flour, cinnamon, salt, & baking powder, set aside.
In another large bowl with mixer cream together Splenda (both) & butter until smooth, about 2-3 minutes. Add eggs & vanilla, beat until smooth, about 1 min. Add half milk & half flour mixture, mix on med until combined, about 1 min. Add remainder of milk & flour mixture, mix until all well combined, about 2 min. Fold in blueberries.
Pour mixture into lined baking cups to 1/2 full.
Bake for 20-25 minutes or until toothpick comes out clean.

Makes 24 muffins.
