1 lb bacon, minced
2 large onions, diced
1 head garlic, minced
4 serrano peppers, minced
2 lb bag pinto beans, soaked
1/2 gallon chicken stock
2 bottles regular beer (NOT light)
1 bunch cilantro, chopped
Mince bacon, fry in stock pot until not quite crispy. Add onion/garlic/peppers, cook @ 5 minutes more. Add beans, chicken stock, beer, oregano and cumin. Add water to cover beans plus 1 inch. Simmer on low heat 1-1/2 hours until beans are cooked, not mushy. Add water if necessary. Add cilantro and simmer 5 more minutes.
1 serving is @ 1 cup

Recipe incomplete. How much cilantro or cumin? Sounds really good. - 11/15/09

Cilantro comes in a 'bunch", like parsley. Use as much or as little as you like. Stems can go in too.
