Introduction

a tasty alternative to boxed mac and cheese when you need comfort food. a tasty alternative to boxed mac and cheese when you need comfort food.
Number of Servings: 6

Ingredients

    cauliflower- 1 bag frozen
    1 red pepper- diced
    2 c skim milk
    2T flour
    4 oz Brie diced
    2 oz mozzerella shredded
    1 oz parmesan grated
    1 T soy sauce or marsala wine
    1 t nutmeg
    2 T unsalted butter

Directions

cook pasta and cauliflower until al dente. Drain and place in baking dish
saute pepper in cooking spray. Add to baking dish.
heat milk until simmering
melt butter, add flour, cook 2 minutes until a thick paste forms. slowly add milk, simmer for 3 more minutes. Add brie and mozzerella to melt. Add nutmeg and marsala wine. Stir well. Salt and pepper to taste ( I didn't add any).
Bake at 425 for 20 minutes until hot and bubbly.
Makes 6 servings approximately 1.5 c each.
