Introduction

This is a vegetarianized version of the Slow-cooker Salsa Chicken using Quorn Naked Chik'n Cutlets instead of chicken.

Number of Servings: 4

Ingredients

    4 Quorn Naked Chik'n Cutlets thawed
    2 Cups Salsa (medium heat)
    1/2 Cup Reduced Fat Sour Cream
    1 Can Reduced Fat Condensed Cream of Mushroom Soup
    1/2 Packet Taco Seasoning (or 1 whole packet if low-sodium)

Directions

Place 4 thawed Quorn Cutlets in slow cooker
Sprinkle 1/2 packet of Taco Seasoning over Cutlets (use whole packet if seasoning is low-sodium)
Add 1 can of Reduced Fat Condensed Cream of Mushroom Soup
Add 2 cups salsa
Cook for 2-3 hours in slow cooker
Stir in 1/2 cup of Reduced Fat Sour Cream
Serve over cooked brown rice

As an alternative to the slow-cooker, this recipe can be made using a deep skillet on the stovetop simmering on low/medium for 30 minutes.

Makes 4 servings of the Chick'n + gravy for the rice.
