Marinated Beet Salad

Introduction

Number of Servings: 6

Ingredients

    1 cup peeled, chopped fresh beets
    1 cup peeled, chopped fresh turnips
    1 cup sliced fresh carrots
    1 small sweet onion, cut into thin wedges
    1/2 cup thinly shredded fresh cabbage
    1/3 cup olive oil
    1/4 cup fresh lemon juice
    2 tbsps granulated sugar
    1 tsp salt
    1/2 tsp pepper
    1/8 cup dried cranberries
    1/8 cup roasted unsalted sunflower seeds

Directions

In bowl, stir together turnips, carrots, beets, onion and cabbage. In smaller bowl, combine olive oil, lemon juice, sugar, salt and pepper. Add olive oil mixture to beet mixture and toss to coat. Cover and chill overnight.
Let mixture stand at room temperature for 30 minutes. Sprinkle with dried cranberries and sunflower seeds.
May also be served on a bed of mixed greens.
Makes 6 servings.
