Spinach and Feta Chicken

Introduction

Ingredients

    1 tbs olive oil
    1 clove garlic
    1 lb boneless skinless chicken breasts (preferably the thin ones)
    1 tbs rosemary
    1 cup crumbled feta cheese
    2 cups spinach

Directions

Mince the garlic. Heat the olive oil in a skillet, add the garlic and rosemary. Add the chicken and brown on both sides. (I cook all the way through here, but with the thin breasts, this only takes a few minutes.) Transfer the chicken to a baking dish. Sprinkle a layer of feta. Shred the spinach and sprinkle a layer of spinach over the chicken breasts. Then sprinkle a little more feta over the spinach. Put in the broiler until the feta and spinach are browned and crispy. Makes 4 servings.
