Ingredients

14 oz package of sweetened coconut
1 can sweetened condensed milk
1 teaspoon vanilla
Directions
In a large bowl combine the coconut, condensed milk and vanilla. Stir well. Drop by small spoonfuls onto a very well greased cookie sheet. Bake at 350° for 10 minutes. Remove from the pan while still warm. Makes about 3 dozen.

These were so easy and super tasty! I tried parchment paper like another person suggested, but they stuck to the paper! We could only eat the top part of the cookie since I could not get them off the parchment paper. Next time I will toast half the coconut first! - 12/8/09

These are very tricky cookies. You have to take them off the pan immediately or they will begin to stick, but the problem is that they are so soft while they are so warm. Get out a nice flat spatula and remove them as carefully as possible and allow them to cool. They will harden up and be fine!
