Ingredients

    2 cups thinly sliced cabbage
    1 cup grated carrots
    Juice from 1 lemon
    1 teaspoon olive oil
    1/4 cup finely chopped dill (optional)
    Salt and pepper to taste

Directions

Mix all ingredients in a bowl.

Makes 6 1/2 cup servings.

  • Gave me incentive to use cabbage, ended up sauteeing cabbage and carrot with balsamic vinegar and small amount of canola oil, Once on plate added avocado, tomato and grated cheese, didn't rate as I had altered it so much - 1/10/09
