Cozy Orzo and White Bean SoupSubmitted by: AKASHA66
IntroductionHealthy, filling and lo cal, high fiber Healthy, filling and lo cal, high fiber
2 medium onions, chopped
4 cloves garlic, crushed
1 big can stewed tomatoes
1 big can white beans, drained
8 cups veggie or chicken stock, defatted
dried chili pepper powder or flakes, to taste
1 cup dry orzo pasta
salt and pepper to taste
Pam a large saucepan, add onion and garlic, sautÃ© til onion is soft, about 4 or 5 minutes.
Add tomatoes, stock, hot pepper flakes, bring to boil.
Add ozro, simmer gently about 12 minutes til pasta is cooked, stir to prevent sticking.
Add bean, heat another 5 minutes. Add salt and pepper to taste.
If you add some parmesan, it would be good, but count it as added calories.
Note to self--added 300 gr lean chopped ham plus one more cup H2O and a half tsp liquid smoke. Excellent and a second, different soup. Add ham calories to total.
