4 cups vegetable broth
1 cup water * (see note)
1 cup uncooked red lentils
2 large carrots, peeled and chopped
2 stalks celery, chopped
1 red bell pepper, seeded and chopped
1 red onion, chopped
2 cloves garlic, minced
1 tbsp rosemary
1 tbsp paprika
black pepper, to taste
Cover and let simmer for 30-60 minutes, stirring occasionally, until vegetables are tender and lentils have lost their shape.
Carefully transfer soup to food processor and puree to desired consistency.
* If serving as a soup, add the additional 1 cup of water to the broth. If serving as a sauce, omit extra water for a thicker sauce.
Makes approximately 6 1 cup servings.
