Favorite Lentil Soup

Introduction

Yummy pureed lentil and vegetable soup, excellent on its own, served with whole grain bread, or drizzled over lightly steamed veggies. Yummy pureed lentil and vegetable soup, excellent on its own, served with whole grain bread, or drizzled over lightly steamed veggies.
Number of Servings: 6

Ingredients

    4 cups vegetable broth
    1 cup water * (see note)
    1 cup uncooked red lentils
    2 large carrots, peeled and chopped
    2 stalks celery, chopped
    1 red bell pepper, seeded and chopped
    1 red onion, chopped
    2 cloves garlic, minced
    1 tbsp rosemary
    1 tbsp paprika
    black pepper, to taste

Directions

In a large pot, bring veggie broth to a boil. Add all remaining ingredients except water**, and return to a boil.

Cover and let simmer for 30-60 minutes, stirring occasionally, until vegetables are tender and lentils have lost their shape.

Carefully transfer soup to food processor and puree to desired consistency.

* If serving as a soup, add the additional 1 cup of water to the broth. If serving as a sauce, omit extra water for a thicker sauce.

Makes approximately 6 1 cup servings.
