Italian Zucchini Quiche

Introduction

I skeptically ate this over three years ago and was hooked. It is so flavorful, even without any meat. I skeptically ate this over three years ago and was hooked. It is so flavorful, even without any meat.

Ingredients

    4 c. zucchini, shredded
    10 green onions, thinly sliced
    1 c. fresh parsley, chopped
    1 t. salt
    1/2 t. dried whole basil
    1/2 t. dried whole oregano
    1/2 t. garlic powder
    8 beaten eggs
    8 oz. reduced fat monterey jack cheese, shredded

Directions

Spray a large skillet with Pam, saute zucchini and onion until tender. Stir in parsley, salt, garlic powder, basil and oregano. Combine eggs and cheese in separate bowl, add to vegetables. Spray a 9 inch pie plate with Pam, pour egg and veggie mixture into pie plate. Bake at 375* for 20 minutes or until set.
