Turkey Chili

Introduction

Best served over rice.
You can also add chopped celery or carrots.
You can top with cheese (low fat), sour cream (low fat), scallions if you wish.

Number of Servings: 12

Ingredients

    1pkg. Ground Turkey - Jennio O 20oz.
    1pkg. Beans (red, pink, kidney, roman, etc. etc.)
    1 cup diced yellow onion
    1 cup diced peppers (red, green, yellow, poblano or hot peppers, your choice)
    1 cup fresh mushrooms chopped
    2 can diced tomatoes - no salt added
    2pkg. Chili seasonings
    4tbsp. Chili powder
    2tbsp. Cumin
    Salt & Pepper to taste
    1 can 33% Less Sodium Chicken Broth
    2 cups Water
    Cooking spray

Directions

1. Prepare beans according to directions on package.

2. Spray pan with cooking spray and brown turkey into small pieces add 1 cup of water and 1pkg of chili seasoning and mix.

3. Drain beans of water and rinse completely. Return to low heat and add the cans of diced tomatoes and chicken broth and pkg of the chili seasoning, the chili powder and cumin. Stir. Add turkey mixture.

4. Spray pan with cooking spray and cook onion and peppers about 4min on medium heat. When onions are just starting to get translucent add mushrooms and cook another 4 minutes. Add to chili pot. Salt and Pepper to taste. Stir well and allow to simmer unti ready to eat.
