Apricot-Orange Bread

Introduction

Ingredients

    • 1 (6 oz.) package of dried apricots cut into small pieces
    • 2 cups water
    • 2 tablespoons margarine
    • 1 cup sugar
    • 1 egg, slightly beaten
    • 1 tablespoon freshly grated orange peel
    • 3 1/2 cups sifted whole grain flour
    • 1/2 cup nonfat dry milk powder
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1/2 cup orange juice
    • 1/2 cup chopped pecans

Directions

1. Preheat oven to 350 F. Lightly oil two 9x5-inch loaf pan.



2. Cook apricots in water in a covered medium-size saucepan for 10-15 minutes or until tender but not mushy. Drain; reserve 3/4 cup liquid. Set apricots aside to cool.



3. Cream together margarine and sugar. By hand, beat in egg and orange peel.



4. Sift together flour, dry milk, baking powder, soda, and salt. Add to creamed mixture alternately with reserved apricot liquid and orange juice.



5. Stir apricot pieces and pecans into batter.



6. Turn batter into prepared pans.



7. Bake for 40-45 minutes or until bread springs back when lightly touched in center.



8. Cool 5 minutes in pan. Remove from pan and completely cool on wire rack before slicing.



Yield: 2 loaves--Serving Size: 1/2-inch slice

    I used fresh apricots from my tree and omitted step 2. Had to add 3/4 cup water then at the end and I omitted the nuts since I didnt have any on hand. Turned out pretty good. My kids wont eat it, though because they are suspicious of anything "whole wheat". - 7/31/08

    I am going to try this. I will use egg substitute instead of the egg, applesauce instead of margarine and probably half the sugar. Since my grandson is allergic to tree nuts I will eliminate the pecans. - 4/23/09

    Using applesauce instead of margarine and splenda instead of sugar makes a difference in the fat and calorie content. The recipe is moist and very good. With eliminating the sugar and margarine I ate a full slice and felt no worries. Grat with a cup of coffee or a cup of skim milk. YUMMY - 4/23/09

    It was a great recipe however, since I am a diabetc, I used Splenda and only 3/4 cup. That is the only problem I find with most of the recipes here is they seem to be of a pretty high sugar content and since its supposed to be healthy eating I find it a little disappointing at times. - 1/12/08

    It looks like the recipe makes about 16 servings. It uses a 9" pan and after baking the loaf would be about 8", divide by 1/2" slices....16 servings. - 10/20/07

    It's not one half of a slice - it is 1/2" slice...so slice the loaf at half inch intervals and you can eat a whole slice for 100 cals :-) Sounds wonderful - I am definitely going to try with some subs as mentioned above. Love the muffin idea!(I'll probably weigh the muffins and slices to check cals) - 5/1/09

    How many slices should we make to get the calorie count it states. I will also sub applesauce and sugar substitute. I love breads like this so will sure give it a try - 4/23/09

    The recipe clearly says "1/2 inch slice" so why all the confusion here? I'm going to give this a try with egg substitute, Splenda, and light butter instead of margarine. May try adding some spices like cinnamon and nutmeg. The applesauce idea is a good one!

    I made this for our senior sunday afternoon tea,used splenda,there was also a pineapple upside down cake and a boston cream pie. This little bread was the first to disappear, good thing there were 2 loaves.Nobody believed it was a healthy recipe. Will make this again and again - 5/20/08

    I've made this with sugar for my husband, but I use stevia. Does anyone know how to convert stevia into measurements for baking? Stevia is a natural, much sweeter tasting sugar substitute and if you use too much it can be bitter. - 4/23/08

  • The calorie count on this is definitely off. There are 48 1 tsp. servings in a cup and if that is the case there are 48 servings in this total recipe, which is much less than a 1/2 inch slice. And the calorie breakdown doesn't even include the milk or the orange juice. - 7/29/10

    I am into a bread-baking-phase right now so I am going to try this recipe. Just reading it, it makes me think to the traditional Italian Panettone minus spices and multiple fruits. Very promissing! :-)
    I will substitute Butter or Olive Oil to Margarine (hydrogenated fat) though. Thanks 4 sharing - 10/20/08

    This recipe looks good but I think the nutritional information is very wrong. none of the ingred. would have fat and more importantly...NO WAY the carb content is 51.6 grams! My calculations say approx. 12-15 grams of carb for this recipe. Carb info is very important for diabetics especially. - 7/16/08
