Laura's Mango Chicken Salad

Introduction

I was trying to put together a quick healthy dinner with what I had available in the house & my family loved this! I was trying to put together a quick healthy dinner with what I had available in the house & my family loved this!
Number of Servings: 1

Ingredients

    1 Mango peeled and diced
    1 9.75 oz can of Swanson White Premium Chunk Chicken Breast, drained
    3 tbsp mayonnaise (use lite or fat free to save on calories)
    1 tsp dried garden mint
    1 tsp dried cilantro
    1/2 tsp chili powder
    1 tbsp dried minced onion
    1 cup shredded lettuce

Directions

Mix all ingredients except lettuce in a bowl. Serve on a bed of lettuce.

Makes (4) 1/2 cup servings.

  • I substituted curry powder for the chili powder. It has a nice subtle earthy taste that pairs well with mango. And I had some dried craisins, so I threw those in as well - 6/28/11

  • Loved this! The combo of the mint, cilantro and onion was such a surprise. I had these herbs growing in pots on my porch, grilled a chicken breast - so it was perfect! - 7/23/09
