diabetic banana bread

Ingredients

    1 cup white flour
    1 cup whole wheat flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp cinnamon
    4 bananas
    1 egg
    1/3 cup canola oil or equivant
    3 tablespoons splenda
    1/2 cup orange juice

Directions

heat oven to 350F. combine flour, baking powder, baking soda and cinnamon in a bowl and blend. In another bowl mash bananas, add remaining ingredients and mix well. pour in a loaf pan lined with wax paper. bake for 40 minutes until toothpick comes out of middle clean.
cool on a rack
makes 12 servings

    I thought this was very good considering the low sugar content! I will definitely make it again - very moist and yummy. I guess the only thing keeping me from giving it 5 stars is wishing it was a little sweeter. But then it wouldn't be diabetic, huh? Thanks for this wonderful recipe! - 1/12/09

  • Thumbs up!!! Who would have thought orange juice!! I used no sugar added applesauce instead of oil and added flax seed and walnuts, I don't like to use splenda, so I used Stevia, so I will have to adjust the nutritional information! Dh and Ds liked it too! - 1/30/10
