Easy Creamy Spinach Cheese Casserole

Introduction

Great crowd pleaser as a side dish! Hearty enough to be a meal served on crusty Italian bread or noodles. High protein / low carb meal served alone. This version is cheesy and creamy, but firm enough to hold it's own. Leftovers are terrific scrambled in eggs.
Great crowd pleaser as a side dish! Hearty enough to be a meal served on crusty Italian bread or noodles. High protein / low carb meal served alone. This version is cheesy and creamy, but firm enough to hold it's own. Leftovers are terrific scrambled in eggs.

Number of Servings: 8

Ingredients

    2-3 boxes frozen, chopped spinach (10 oz. ea.)
    (depending upon firmness desired - calculate with 2.5 boxes)


    1 cup reduced fat Sour Cream

    8 oz. package Mozzarella Cheese, part skim, shredded

Directions

Preheat Ovent to 350 *

Cook spinach according to package directions and drain.

Move spinach to a baking dish (approx 9 x 9 )

Mix in Sour Cream to cool

Mix in Mozzarella Cheese

Bake at 350, for 1 hour.

Serve warm or cold

Makes 8 - 3/4 cup servings
