Whole Wheat Vanilla Almond Waffles

Introduction

Ingredients

    Dry Ingredients
    1/2 c. all purpose flour
    1/2 c. whole wheat flour
    1/4 t. baking soda
    1/2 t. baking powder
    1/2 t. salt
    2 T. light or dark brown sugar
    1/4 cup almonds

    Wet Ingredients
    2 egg whites, beaten
    1 c. buttermilk, lowfat
    1 t. vanilla

Directions

mix all the dry ingredients in a small bowl. In a second larger bowl, mix the wet ingredients. add the dry ingredients to the wet mixture half at a time, make sure not to over mix. add 1/2 cup to waffle iron or griddle for pancakes. makes 4-6 inch round waffles or pancakes.

Note: I make a batch on Sundays and eat half a waffle with turkey bacon and a poached egg. I then freeze the remaining waffles in halves for use later in the week, cuts down on cook time. You can either toast them or microwave them for about 45 secs to reheat. makes breakfast a breeze. half waffles have 100 calories, 1.8 g. fat, 17.1 g. carbs and 4.0 g. protein with about 1 g. fiber. 2 g. more fiber if you substitute the oats for the app.
