Introduction

A old weight watchers recipe, a family favorite, naturally low in fat and calories. You can make your own buttermilk by using a large measuring cup: add 1/4 to 1/3 cup vinegar then fill milk to the 1 1/2 cup line. Ingredients

    1/4 cup soft margarine
    3/4 cup granulated sugar
    3 eggs
    1 1/2 teaspoon vanilla extract
    3 very ripe bananas, mashed
    1 1/2 cup low fat (1.5 % buttermilk)
    2 1/4 cup flour
    2 teaspoons baking soda
    1 teaspoon salt
    powder sugar for garnish(not figured into calories)

Directions

Preheat oven to 350 degrees
Spray a 12 cup bundt pan with cooking spray, set aside.
In a large bowl, with mixer at medium speed, beat margarine and granulated sugar until light and fluffy. Beat in eggs,one at a time. Stir in vanilla and banana & buttermilk until well blended.
In medium bowl, combine flour, baking soda and salt, add to banana mixture stirring until combined.
Pour batter into prepared pan, bake 40 to 45 minutes until springs back when lightly touched. Cool cake in pan on rack 30 minutes before turning out of the pan to cool completely. Sprinkle with confectioners sugar if desired.
