Low-fat Granola

Submitted by: OCTOBERBRIDE09

Introduction

This is a really versatile granola recipe and it tastes awesome. You can add different nuts, and dried fruits to your taste. If you like different flavorings you can add that to your syrup mixture, (ex. almond extract, vanilla, ginger, nutmeg.) You don't have to add chocolate chips if you don't want to. White chocolate chips, peanut butter chips, m&m's etc. are all good too...or nothing at all. Have fun with it. This is a really versatile granola recipe and it tastes awesome. Ingredients

    2 c. old-fashioned oats
    1/2 c. wheat germ
    2 tb. brown sugar
    1/8 tsp salt
    1/3 c. slivered almonds
    1/4 c. pure maple syrup
    1 tb. water
    3 tb. canola oil
    1/2 tsp. cinnamon
    1 tsp. fresh orange zest
    1/3 c. craisins
    1/3 c. raisins
    1/3 c. coconut
    1/3 c. mini chocolate chips

Directions

Mix together in a large bowl, oats, wheat germ, brown sugar, salt, and almonds. In a small sauce pan, put the maple syrup, oil, water, cinnamon and orange zest. Bring to a simmer over low hear for about 3 minutes. Pour over oat mixture and stir to coat.
Lightly spray a baking sheet with cooking spray. Spread the oat mixture on pan and scrunch with hands to make clumps. Bake at 275 degrees for 30 minutes. Add the craisins, raisins and coconut and toss lightly. Bake an additional 15 minutes until light golden brown and crisp. Remove from oven and let cool completely. Add the chocolate chips. Store in an air tight container for up to 2 weeks.
