Stuffed Chicken Breast

Ingredients

    * Chicken Breast, no skin, 4 ounces
    * Onions 2 tbsp chopped
    * I Can't Believe It's Not Butter, Light Spread, 1 Tbsp
    * Olive Oil
    * Tomatoes, 1 slice, medium (1/4" thick)
    * Provolone Cheese
    * Spinach, fresh, 1 cup
    * Canadian Bacon 1 Slice
    * Spices (any)

Directions

Preheat oven to350 degrees
Pound chicken breast until thin
Marinate tomato slices in olive oil and spices
Melt 1/2 tablespoon into frying pan
Add onions, garlic, and spinach until onions are translucent and spinach is wilted
Spread rest of butter onto flattened chicken.
Add onion, garlic, and spinach mixture
Put sliced tomatoes and cheese on mixture

Roll chicken breast and secure with toothpicks and / or string.

Bake for 30 minutes until chicken is no longer pink.

Optional: I wasn't a fan of it being so pale looking, so after chicken is removed from the oven, brown it in a small frying pan to get a little color on it.

Let rest for 10 minutes before serving.

  • I haven't made this recipe but it sounds good. My only concern is the amount of sodium it contains because I have congestive heart failure and have to watch my salt intake. - 1/5/09
