White Chili

Introduction

Good on a cold winter's day. Easy, frugal, fast and delicious! Good on a cold winter's day. Easy, frugal, fast and delicious!
Number of Servings: 8

Ingredients

    1 Tbsp canola oil
    2 onions, chopped (about 2 cups)
    3 cloves garlic, minced
    2 carrots, chopped (about 1 cup)
    3 15.5 oz cans great northern beans, drained and rinsed
    3 cups canned low sodium vegetable broth
    2 tsp ground cumin
    1/2 tsp ground cloves
    1 tsp ground oregano

Directions

In a large saucepan, warm oil over medium heat. Add onions, garlic and carrots and saute until onions are soft.
Stir in beans, broth, cumin, cloves and oregano. bring o a boil, cover, reduce heat and simmer until warmed through and flavors develop, about an hour. Serve in bowls, top with shredded reduced fat Monterey Jack cheese if desired.
