Chicken, Black Bean, Corn, and Potato Skillet

Introduction

This is a great skillet dinner that combines chicken, potatoes, corn, and black beans. It is excellent on a flour tortilla, or just by itself. Top with extra salsa or sour cream. Ingredients

    - 3 boneless, skinless chicken breasts
    - 4 medium red potatoes
    - 1.5 cups black beans, rinsed and drained
    - 1.5 cups canned yellow corn, drained
    - 1 cup salsa of preference
    - 1/2 cup shredded cheddar cheese
    - 1 tbsp butter or margerine
    - salt and pepper to taste

Directions

Wash and dice potatoes, place in a large pot and cover with water. Bring to a boil and cook until fork tender, about fifteen minutes.

While the potatoes are cooking, rinse and pat dry the chicken breasts. Dice into 1/2 inch pieces. Spray a skillet with non-stick cooking spray, and sautee the chicken pieces over medium heat until cooked through and slightly browned, about seven minutes. Remove to a separate dish.

When the potatoes are cooked, drain and rinse. Place them in the skillet the chicken was cooked in, and add 1 tbsp butter. Cook, stirring frequently, until potatoes are browned, about five minutes. Put the chicken back into the skillet with the potatoes, and add the black beans and corn. Stir to combine, then add the salsa and stir again.

Heat through, top with cheese, and continue to heat until cheese is melted. Serve by itself or on a flour tortilla, topped with sour cream and salsa.

    This has very good taste, and is very hearty! I used a frozen potato medley with some veggies which made it even simpler. Next time I think I'll add peppers and onions. Thanks!! - 4/6/09

  • Delicious! Even my picky husband and 4 tear old loved it, until she found a salsa chunk. Easy fix though, I will grind the salsa into a sauce next time, that way we can still have the flavor but the kid doesn't have the yucky chunks. - 12/8/10

  • Well, I overcooked the potatoes, so it ended up being mashed potato-corn-bean-chicken mush that we had to eat in tortillas. But, it was still really, really good. My husband loved it and I'll definitely make it again -- but I might skip boiling the potatoes next time and just sautee them until soft. - 1/20/09

  • This was excellent. I changed the potatoes to 2 cups of brown rice I had left over and added 1tsp or so of chili powder and I have been struggling not to eat too much. Thanks for the recipe. My husband loved it too and he didn't even smoother it with ketcup! Now that's a compliment! - 1/17/09
