1 10 oz package vegetable patties ( used Gardenburger)
1/2 cup prepared roasted red bell pepper hummus(I used Athena)
4 whole wheat pitas, cut in half
2 cups shredded lettuce
8 slices tomato
16 slices cucumber
Spread 1 Tbsp hummus inside each pita half. Fill each pita half with a veggie patty half, 1/4 cup lettuce, 1 slice of tomato. and 2 slices of cucumber.
Makes 4 servings(2pita halves)
