Veggie Quesadilla

An easy and delicious lunch or dinner. Feel free to use fat-free cheese or sour cream in place of the Kraft cheese! Any kind of shredded/grated cheese will work, as long as it melts. Ingredients

1 Tortilla (I usually use Flat Out or La Tortilla Factory brands)
1/4 Cup each of the following (add more if you'd like!) - diced onion, diced red/green peppers, any other kind of veggie you prefer!
1/4 shredded cheese (I usually use Kraft's Mexican Blend)
Sour Cream and Salsa for dipping!
Directions
This recipe makes one quesadilla.
Slice onions, red/green pepper, and any other kind of veggie you prefer; set aside.
Spray a medium-heated skillet or large cooking pan with PAM or some kind of non-stick cooking spray and lay the tortilla on the pan.
Spread cheese on one half of the tortilla and place veggies on top; fold the tortilla over and press LIGHTLY with a spatula.
Cook on each side for about 2-3 minutes, keeping an eye on the crisp and color of your tortilla.
Remove from skillet, slice into 2-4 wedges and enjoy! Use salsa and sour cream for dipping.
