Fish Marengo

Introduction

I have seen similar recipes in cookbooks, but I got this one from a friend of mine. Easy, quick, and yummy. I have seen similar recipes in cookbooks, but I got this one from a friend of mine. Easy, quick, and yummy.
Number of Servings: 4

Ingredients

    4 Tilapia filets
    Salt and Pepper to taste
    1 tomato diced
    1 TB olive oil
    1/2 cup sliced fresh mushrooms
    1/2 cup chopped onions
    2 Cloves garlic chopped
    Lemon juice from 1 lemon
    1/4 ts thyme

Directions

Preheat oven to 350. Put fish in baking dish. Sprinkle with seasonings. Spoon tomatoes over top.
Saute onions, mushrooms, and garlic in pan with olive oil until just soft. Add lemon juice and spoon over fish. Bake about 20 minutes or until fish is cooked through and flakes easily.
