Ingredients

1 1/2 cup flour
3/4 cup Splenda (25 tbsp)
1/4 cup sugar
3/4 cup yam ( puree)
3/4 cup milk (2%)
2 eggs ( beaten)
3/8 tsp. Nutmeg
1/4 tsp. Cinnamon
1/4 tsp. Allspice
1/4 tsp. Ginger
1/4 tsp. Cloves
1/8 cup Calona oil
1/4 cup Raisins
1 tsp. Baking Powder
1/2 tsp.Baking Soda
Directions
1. Place all dry ingredients in a large bowl,
Stir and make a well.
2. Beat eggs add oil, milk and yams, beat well.
3. Stir wet mixture with the dry mixture .
4. Grease muffin tin, pour mixture.
5. Bake at 375 F degree for 15 to 20 minutes
or until passing the tooth pick.
Makes 12 regular or 6 large muffins
