White Bean and Turkey Sausage Soup

Ingredients

    cooking spray
    2 cups of pre-chopped green pepper, onion and celery mixture (about .67 c. of each)
    2 tsp bottled minced garlic
    4 (4 oz) links of sweet turkey italian sausage (removed from casing)
    2 (15.5 oz) can cannellini beans, drained and rinsed
    1 (14 oz) can chicken broth
    1/4 tsp. ground black pepper

Directions

Makes 5 (1c) servings

1.Heat a large saucepan over medium heat. Coat pan with cooking spray. Add vegetable mixture and garlic; saute 4 min. or until tender. Add sausage; cook 4 min. or until sausage is done (I break it up with a potato masher)
2.Mash half of white beans with the back of a fork or a potato masher. Add mashed beans, whole beans, broth, and pepper to sausage mixture; bring to a boil. Cover, reduce heat, and simmer 4 min. I served a loaf of sourdough bread with this soup for a dinner. It was really good.
