5 large eggs
2 Tablespoons Milk
3/4 cup fresh mushrooms, chopped
1/2 cup onion, chopped
1/4 cup each, yellow and red bell peppers, chopped
1/4 cup mozzarella cheese
In a bowl, wisk the eggs, milk and some salt and pepper if desired, set aside.
Saute the veggies together in a small amount of Olive Oil for about 3 minutes or until tender.
Spray a muffin pan with cooking spray and divide mixture among the cups. Sprinkle each cup with cheese. Pour the egg mixture over the veggies in each cup.
Bake at 350 (F) for 10-12 minutes or until lightly golden brown and set.
